The Center for Agriculture and Food Systems at Vermont Law School supports scholars, practitioners, and students in producing innovative research and legal tools for use by the food and agriculture community. CAFS offers an expanding curriculum in food and agriculture for law and policy students in order to train advocates for sustainable local and regional food systems.

Emily Spiegel joined CAFS as an Assistant Professor in 2017. Professor Spiegel comes to us most recently from Duke University’s Environmental Law and Policy Clinic, with experience in domestic and international environmental and agriculture work. She previously worked at the U.S. Department of Agriculture and in the U.N. Food and Agriculture Organization’s Development Law Service, and served as a Peace Corps volunteer in Jordan. Emily received her J.D. from Duke and her B.S. in Foreign Service from Georgetown University.
Emily Spiegel is the network champion (main point of contact) for Center for Agriculture and Food Systems.
